3 days Contemporay Wedding Cake

Day 1 (5hrs) Building Blocks (Part 1)

  • Learning the components of a stacked and layered cake
  • Identify diferent styles, techniques and execute recipes
  • Identify equipment needed to decorate cakes
  • Learn how to prepare a cake for frosting
Day 2 (5hrs) Building Blocks Foundation (Part 2)

  • Assemble separate cake tiers for stacking and decorating
  • Learn how to cleanly drape a tier of cake in fondant
  • Learn how to fill and properly hold and use a piping bag
  • Learn various border and piping techniques
  • Learn various top decorations such as flowers and writing
  • Finalize concept and design
Day 3 (4hrs) The Final Product (Part 3)

  • Garnish and beautifly your wedding cake
  • Finishing clean touch up
  • Finishing clean touch up
  • You’ll end the class by learning safe and fail-proof ways to stach and secure cake tiers

Topics include familiarization with cake decorating tools, bags, tips and an exploration into different styles of cakes. Including rolling, covering, smoothing and buffing. Students will practice basic border techniques, decorative piping, drop flowers and leaves. The techniques learned will be used to finish a 6″ and 8”  layer cake that each student takes home.

2 days Bread Baking Course

Day 1 (5hrs) Theory/Practical (Part 1)

Learn to bake your own fresh pastries as well as any bakery. Prepare the LBM recipes for delicate pastry dough, then roll it to the proper thickness. You will then shape the dough to create sweet rolls and pastry. Measure, mix, incorporate and fold in fresh ingredients such as fruit and cream to make luscious fillings.

In this class you will be introduced to the art of bread making. You will learn about the basic ingredients used for making bread at home and the techniques required for kneading by hand, proofing, shaping and baking perfect rolls. Make perfectly soft buns similar to those found at premium bakeries.

3 Weeks Intensive Professional Decoration

A class where you will learn to make a lovely bouquet of 3D sugar flowers using fondant and gumpaste.  We’ll teach you how to make everything from simple punch-out flowers and traditional roses to ruffly fabric-inspired flowers.  We’ll even show you how to draw inspiration from the tools and cutters you may already own to create completely unique and modern flowers.  The class will take an artistic approach to understanding the materials and techniques behind the art of  sugar flower sculpture.

Class is approximately 3 hours long and includes all supplies needed to create a beautiful sugar floral arrangement.
